Vanilla Yogurt Popsicle

Vanilla yogurt popsicle with raspberries and blueberries! How cute are these?! They are the perfect healthy summer treat. Yum! Yum! Yum!

 

Ingredients:

12 ounces (two small containers) of berries, we used blueberries and raspberries

2 teaspoons sugar

A dash of honey (to taste)

2 cups vanilla yogurt (you can use Greek yogurt as well, we would recommend a flavored Greek yogurt to make it taste better but you can also add more honey to make it sweeter).

 

Directions:

Place the blueberries, raspberries, yogurt, honey, and sugar into a blender. Cover, and blend until fruit is chunky or smooth, as desired.

Pour this mixture into your popsicle molds and put in the freezer for 5 hours. Viola! When you’re ready to pop out the popsicles, run warm water around the outsides of the molds for about ten seconds and gently remove the popsicles. .

Sugar Free Blondies

Sugar free, peanut butter blondies. Yum! These brownie/cookie hybrid treats are amazing!!

Ingredients for the blondies:

1 C peanut butter (smooth, organic, stir well)

1 egg

1/3 C honey

1 t vanilla extract

1/2 t salt

1/2 C almond flour

 

Ingredients for chocolate drizzle:

1 ounce chocolate

(Whatever you like, we used 88% dark chocolate)

1 pinch of finishing salt (I used espresso salt)

Directions:

Preheat oven to 350, line 9x9 baking dish with parchment paper.

In medium bowl mix peanut butter, egg, vanilla, salt, and honey.  Stir until smooth. Fold in almond flour, dough should be sticky but not runny. Press dough in baking dish in an even layer. Bake for 20 minutes, let cool for 10.

While they are baking....

Place chocolate in microwave bowl for 30 seconds and stir.  Heat for 15 seconds and stir...repeat process until chocolate is completely melted. Use a spoon to drizzle chocolate onto blondies.  Cut into even squares the size of a brownie. Sprinkle with salt and serve.

No Bake Energy Balls

NO BAKE, 4 ingredient energy ball recipe...These are amazing and so simple!

Ingredients:

1.5 C pitted soft medjool dates (about 16 dates)

1.5 C peanuts

3/4 C semi-sweet choc chips

1 tsp sea salt

​

Directions:

Pulse peanuts in food processor into fine powdery texture.

Add dates and salt and run food processor until dates are sticky and mixed w peanuts.

Add choc chips and pulse to mix (not break) them.

​

Use hands to roll 1 inch balls... they should hold together firmly.

Refrigerate for 15 min and enjoy!

(Store in an airtight container in refrigerate)

​

Makes 20-22 balls.
